This is a great quick meal for feeding the family or entertaining guests. This was one of the first meals I started making, and I continue to love it. Mainly because it's quick and simple, and it always leaves left overs for future eating escapades. I have to give respects to my Step father, Dr. Luis Montes, for influencing portions of the dish and encouraging me new ways to try to make it. I also have to give props to him for almost killing pasta. Even tho its quick and simple, it's not appropriate to have it almost every other day! So thanks Luis...

There are so many ways to make Penne Pasta, so try any variation you would like. I'll be posting up some other pasta recipes as I continue...
